Authentic Kumaoni Cuisine

Kumaoni cuisine is a nutritious Himalayan tradition rooted in the local ecosystem to keep the body warm during harsh winters. It relies on locally grown millets, lentils, and wild herbs traditionally cooked in iron vessels for enhanced mineral value.

Traditional Breads & Sides

Mandua ki Roti

This traditional, dark brown flatbread is crafted from nutrient-dense finger millet (ragi) flour, which is a staple across the Kumaon region. Naturally rich in calcium, iron, and dietary fibre, it is traditionally prepared by hand-patting the dough into rustic rounds and cooking them on an iron griddle. Topped with a dollop of pure desi ghee and paired with hot lentil curries, these flatbreads provide sustained warmth and energy, making them an essential part of the high-altitude Himalayan diet.

Pulao (Kumaoni Style)

Kumaoni-style Pulao is a comforting, aromatic rice preparation that captures the essence of rustic village kitchens. Unlike elaborate royal pulaos, this version focuses on simplicity and local produce, cooking indigenous rice varieties with whole mountain spices, tender green peas, and occasionally roasted black soybeans. Slow-cooked to absorb every nuance of flavor, it offers a deeply comforting aroma and makes for a wholesome standalone meal or a soothing accompaniment to rich lentil gravies.

Bhang ki Chutney

This vibrant, pale-green condiment is one of the most distinctive and beloved accompaniments in Kumaoni culinary traditions. It is made by carefully roasting hemp seeds (bhang) and grinding them on a traditional stone mortar (silbatta) along with fresh green chillies, mint, coriander leaves, garlic, and a generous splash of fresh lemon juice. The result is a sharp, nutty, and tangy paste that instantly elevates the flavor of simple daily meals, parathas, and snacks.
